  1. Prepare the Veggie Chop

    Heat oil in a pan over medium heat. Add chopped onions and sauté until translucent. Add minced garlic, grated ginger, and chopped green chili (if using). Sauté for another minute. Add chopped mixed vegetables to the pan and cook until they are tender. Once the vegetables are cooked, add mashed potatoes, garam masala, cumin powder, coriander powder, and salt. Mix everything well and cook for a few minutes until the mixture comes together. Remove the veggie chop mixture from heat and let it cool down.
  2. Shape and Cook the Veggie Chop

    Once the mixture has cooled, take a portion of it in your hands and shape it into a patty of desired size and thickness. Heat a little oil in a pan over medium heat. Place the veggie chop patties in the pan and cook until they are golden brown and crispy on both sides, flipping them halfway through cooking. You can also bake them in the oven if preferred.
  3. Assemble the Burger

    Slice the burger buns in half and lightly toast them if desired. Spread Veeba Burger Mayo on the bottom half of each burger bun. Place a lettuce leaf on top of the mayo. Add a veggie chop patty on top of the lettuce. Top the patty with sliced tomatoes and onions. Spread another dollop of Veeba Burger Mayo on the top half of the burger bun and place it on top of the burger. Secure the burger with a toothpick if needed.
