  1. Prepare the Filling

    In a mixing bowl, combine the chopped capsicum, tomatoes, and onion. Add the mashed boiled potatoes. Season with salt to taste. Add 3 tbsp Veeba tandoori mayonnaise and 1 tbsp fresh coriander. Mix well until all ingredients are evenly combined.
  2. Assemble the Sandwich

    Take two slices of brown bread. Spread a generous amount of the tandoori aloo filling on one slice. Place the other slice of bread on top to make a sandwich. Lightly spread butter on the outer sides of the bread slices.
  3. Cook the Sandwich

    Heat a non-stick pan or griddle over medium heat. Place the sandwich on the pan and cook until the bread is golden brown and crispy, about 2-3 minutes per side. Repeat the process for the remaining sandwiches.
  4. Serve

    Cut the sandwiches diagonally and serve hot with your favorite chutney or sauce. Enjoy your Tandoori Aloo Sandwich!
