Spicy Bean Rice With Marinara Sauce & Jalapenos

  1. Cook the Rice

    Rinse the rice under cold water until the water runs clear. Cook the rice according to the package instructions, using either a rice cooker or a saucepan. Once cooked, fluff the rice with a fork and set it aside.
  2. Saute the Aromatics

    Heat some olive oil in a large skillet or pan over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent and fragrant, about 2-3 minutes.

  3. Add Bell Pepper and Beans

    Add the diced bell pepper and drained beans to the skillet. Stir well and cook for another 2-3 minutes until the bell pepper softens slightly.

  4. Season

    Sprinkle cumin powder, chili powder, salt, and pepper over the mixture in the skillet. Stir to combine, allowing the spices to coat the beans and vegetables evenly.

  5. Incorporate Veeba Marinara Sauce

    Pour Veeba Marinara Sauce over the bean and vegetable mixture in the skillet. Stir well to combine all the ingredients and let the sauce simmer for a few minutes to heat through and meld the flavors.

  6. Fold in Cooked Rice

    Add the cooked rice to the skillet with the bean and marinara sauce mixture. Gently fold the rice into the mixture until everything is well combined and heated through.

  7. Add Jalapenos

    Fold in sliced jalapenos, reserving some for garnish if desired. Adjust the amount according to your desired level of spiciness.

  8. Serve

    Transfer the Spicy Bean Rice with Marinara Sauce & Jalapenos to a serving dish. Garnish with fresh cilantro leaves and additional sliced jalapenos if desired. Serve hot as a delicious and satisfying meal.
