Prepare the Paneer
If you have a stovetop smoker or a smoking gun, you can smoke the paneer slices for added flavor. Otherwise, you can marinate the paneer in a mixture of spices like cumin, paprika, and salt for 10-15 minutes for flavor. -
Assemble the Sandwich
Take two slices of bread and spread Veeba Peri Peri Sauce on one side of each slice. Place the thinly sliced smoked paneer on one slice of bread.

Add Toppings
If desired, add lettuce leaves, sliced tomatoes, sliced onions, or cucumber slices on top of the paneer to add freshness and crunch to the sandwich.

Close the Sandwich
Place the other slice of bread with the Peri Peri Sauce side down on top of the paneer and toppings to close the sandwich.

Grill the Sandwich
Heat a grill pan or a skillet over medium heat and add a little butter or olive oil to grease the surface. Place the assembled sandwich on the pan and grill for 2-3 minutes on each side until the bread is golden brown and crispy, and the paneer is heated through.

Serve
Once the sandwich is grilled to perfection, remove it from the pan and cut it diagonally into halves or quarters. Serve the Smoked Paneer Sandwich hot with extra Veeba Peri Peri Sauce on the side for dipping, if desired.
