Cook the Rice
Rinse the rice under cold water until the water runs clear. Cook the rice according to the package instructions, using either a rice cooker or a saucepan. Once cooked, fluff the rice with a fork and set it aside. -
Saute the Aromatics
Heat some olive oil in a large skillet or pan over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent and fragrant, about 2-3 minutes.

Add Bell Pepper and Beans
Add the diced bell pepper and drained beans to the skillet. Stir well and cook for another 2-3 minutes until the bell pepper softens slightly.
